French Onion Soup

5 large Onions
2 tbls Butter
2 tbls Olive Oil 
2 tbls Balsamic Vinegar
1 ltr Beef Stock (2 stock cubes)


1. Slice the onions into half moons, thinly is good
2. add the melted butter
3. add the olive oil
4. salt and black pepper to season
5. Cover and cook on high for 5 hours or until the onions turn a soft golden brown.

6. add the balsamic vinegar 
7. add  the beef stock  
8. Cover and cook on low OVERNIGHT

Done! Portion out the soup and freeze.

When you're ready to eat...

1. Heat the soup up
2. Put it in an oven-proof bowl, 
3. Onto a sliced baguette add a drizzle of butter and shaved Grana Padano, 
4. Grill until cheese is lightly browned

  1. Ooh, I've never made french onion soup but it looks truly delicious and so hearty! It's still quite wintery here in Edinburgh so I need some comfort food to get me through until spring. I think I could easily veganify it too with some veggie butter and stock.
